Lemon Sponge Pie

Ingredients

  • 2 Eggs, separated
  • 1 Lemon
  • 1 Cup Sugar
  • 2 Tbs. Flour
  • 1 Tbs. Butter
  • 1/4 tsp. Salt
  • 1 Cup Milk

Preparation

Step 1

Mix sugar, flour, and egg yolks in a bowl. Mix in lemon juice squeezed from 1 lemon. Add soft butter and grated rind of the lemon. Add 1 cup milk and mix well. Beat egg whites until soft peaks form. Gently fold in the beaten egg whites to the lemon mixture. Pour into an unbaked pie crust. Bake at 350 degrees for 45 minutes to 1 hour.
