Ingredients
- 8 ounces smoked gouda cheese, cut into 4 pieces
- 1 16 ounce package frozen spinach, thawed and squeezed dry
- 4 large eggs
- 2 cups cottage cheese
- 2 tablespoons GF flour
- 1/2 teaspoon freshly grated nutmeg
- 1 cup scallions, chopped (green part only)
- 1 tablespoon grated parmesan cheese
- 1 teaspoon paprika
Preparation
Step 1
Preheat oven and baking sheet to 450° F.
Generously spray a 9" round dish with non-stick vegetable or olive oil spray.
Pulse the gouda in a food processor until finely chopped.
Add the spinach, eggs, cottage cheese, flour and nutmeg and process until well combined and cottage cheese is no longer lumpy (about 30 seconds).
Add the chopped scallions and pulse to mix.
Pour the mixture into the prepared dish and sprinkle with parmesan cheese and paprika. Place the quiche on the preheated baking sheet and bake until the center is just set, 25 to 30 minutes.
Allow quiche to sit for 10 minutes before cutting.
