Chicken****Greek Salad in a Jar

15/03/16 - VG as written. Fills me up for the whole afternoon. Add a few leaves of fresh basil to the top of the jar the day you bring it to work if you have some on hand.
04/04/16 - Update - I used cannellini instead of garbanzo beans and I didn't have cucumbers or add the olives or capes. I used spinach/arugula blend for the greens and it was still great.

Ingredients
- 6 tablespoons low fat Greek Vinaigrette (see recipe)
- 1/2 cup garbanzos or cannellini beans, rinsed and drained
- 20 cherry tomatoes, halved
- 2 mini cucumbers, sliced
- 1/2 large red pepper, diced
- 1/4 cup thinly sliced red onion
- 2 ounces diced feta cheese
- 4 ounces chopped poached chicken
- 6 Nicoise or Kalamata olives, sliced
- 1 tablespoon capers, drained
- 3 cups chopped romaine lettuce
Preparation
Step 1
Divide and layer all ingredients into mason jars. Start with salad dressing, then cucumbers, tomatoes, red onion, cheese, olives, chicken and end with lettuce. Put mason jar top on and store in refrigerator.
