Ingredients
- 1 1/2 cups water
- 1 1/2 cups cold milk
- 2 T butter
- 1 ounce package onion soup mix
- 1 cup yellow corneal
- 1/2 cup whole kernel corn
- 1/2 bell peppers, chopped
- 1 jalapeño pepper or 1 cherry pepper chopped to taste
- 1/2 cup shredded cheddar cheese or 1/2 c feta

Step 1
Preheat oven to 350. Bring water, milk and butter to boil in 3 qt saucepan. Whisk in cornmeal and onion soup mix. Simmer uncovered, stirring constantly for about 20 min or till thickened. Stir in corn and peppers. Spread in a lightly greased 9 inch pan and sprinkle with cheese. Bake at 350 for about 20 minutes. Let cool until firm. When cool, cut into triangles ( cut in squares then cut squares in half to form triangles). Refrigerate or freeze. Before serving reheat in oven or on grill until hot and a little crispy. May add cilantro if desired.
