Ingredients
- 2 lbs. small red potatoes scrubbed
- 2 T red wine vinegar
- 1 T dijon mustard
- 1 t salt
- 1/2 t freshly ground pepper
- 2 T olive oil
- 1/4 c minced shollots or red onions
- 1 c finely chopped celery
- 1/4 c chopped parsle

Preparation
Step 1
Boil potatoes in salted water..just until tender..15-20 mins..Drain..cool slightly..dice
Whisk vinegar, mustard, salt & pepper in large bowl..Whisk in oil..Add shallots and warm potatoes..toss. Cool
Stir in celery & parsley
