Classic Potato Vinaigrette Salad


The potatoes should be warm when tossed with the vinaigrette so they will fully absorb its flavors

  • 2 lbs. small red potatoes scrubbed
  • 2 T red wine vinegar
  • 1 T dijon mustard
  • 1 t salt
  • 1/2 t freshly ground pepper
  • 2 T olive oil
  • 1/4 c minced shollots or red onions
  • 1 c finely chopped celery
  • 1/4 c chopped parsle



Step 1

Boil potatoes in salted water..just until tender..15-20 slightly..dice

Whisk vinegar, mustard, salt & pepper in large bowl..Whisk in oil..Add shallots and warm potatoes..toss. Cool

Stir in celery & parsley
