Ingredients
- 2 cups water,
- 1 cup light coconut milk (I didn’t have this so I used 2% milk with a couple of drops of coconut extract)
- 1 cup steel cut oats,
- 1/2 cup unsweetened coconut,
- 1/4 cup coconut sugar (just used regular sugar)
- 1 Tbsp vanilla extract,
- 1/2 cup chopped or slivered almonds,
- 1/4 tsp Himalayan sea salt, (used some fine sea salt I already had),
- 1/2 cup dried cranberries (optional

Preparation
Step 1
Add all together in the pot. Stir. Place lid on pot, manual 4 minutes, after timer goes off, press cancel , NPR. Once pressure is released, open, stir and serve. It may take a minute or two to thicken up. If too thick, just add a little milk or cream when serving. Oh, I did brown the oats first in a tablespoon of butter on Saute for 3 minutes to kind of toast them). Had leftovers two days later and still very good, just added some milk to them when serving.
