Cranberry Cream Cheese Coffee Cake

Ingredients

  • Crumb topping:
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 cup butter or margarine (I used butter)
  • Cream cheese layer:
  • 250 g cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • Cake:
  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup orange juice
  • 1/4 cup oil
  • 1 tsp. vanilla
  • 1 egg
  • 2 cups chopped cranberries
  • 2 Tbsp. orange rind

Preparation

Step 1

Stir topping ingredients together until well mixed. Set aside.

Beat the cream cheese and sugar together until smooth. Add the egg and vanilla and mix until blended. Set aside.

Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in the orange juice, oil, vanilla and egg. Fold in the cranberries and orange rind. Pour into a 9" springform pan (batter will be thick). Spread cream cheese mixture over cake batter. Sprinkle with crumb topping. Bake at 350 degrees F for 65-75 minutes or until top springs back. Let cool 15 minutes, remove ring from springform pan and let cool completely.
