Maple & Butter Roasted Pears with Chocolate Drizzle

  • 2 tablespoons pure maple syrup
  • 2 teaspoons butter
  • 2 {1/2-pound) large firm-ripe Bosc or Bartlett pears, peeled, halved, and cored
  • 1/4 cup dark chocolate (60%) chips

Step 1

Preheat oven to 425°F.

Combine maple syrup and butter in medium ovenproof skillet, such as cast iron, and set over medium-high heat. Cook until butter is melted, about 30 seconds. Add pears, cut side down, and cook until lightly browned, about 6 minutes; turn pears over.

Transfer skillet to oven and bake until pears are just tender when pierced with fork, about 10 minutes longer. Let cool in skillet 10 minutes.

Meanwhile, place chocolate chips in small microwavable bowl and microwave on High until melted and smooth, 30-45 seconds, stirring every 15 seconds. Place pear half on each of 4 plates and drizzle evenly with sauce.

FYI There are several varieties of pears available, including Anjou, Bartlett, Bosc, Cornice, Forelle, and Seckel. Anjou and Bosc pears are in season in the fall, winter, and spring, while the others varieties are available in the spring and summer. Look for firm, well-colored pears without any blemishes. Ripen them at room temperature until they are fragrant and yield to gentle pressure, then refrigerate for up to 3 days.
