Ingredients
- 1/2 to 3/4 pound thin spaghetti
- 2 T vegetable or wok oil
- 2 Cups fresh snow peas
- 1 small red bell pepper, cut into thin matchsticks
- 4 scallions, thinly sliced on an angle
- 1 Cup fresh bean sprouts
- 1 inch peeled gingerroot, grated or minced
- 3 cloves garlic, minced
- 1/2 cup aged tamari (dark soy sauce)
- 2 T toasted sesame oil
Preparation
Step 1
Cook and drain the pasta.
Heat a large non-stick skillet over high heat. Add oil then immediately add snow peas, bell pepper, scallions, adn bean sprouts and stir-fry 2 or 3 minutes.
Add ginger and garlic, continue stir-frying 1 minute, then add pasta and combine with vegetables until evenly distributed. Add tamari sauce and toss until evenly coated. Transfer to a platter, drizzle with sesame oil, add salt if desired.
