nutritionally satisfying, too? You can bump up the nutritional value of pasta and sauce with one easy ingredient: a can of beans. Beans "beef up," so to speak, the protein and dietary fiber without adding a lot of fat. They add flavor, too.
Sure, you could dress up this recipe with Italian herbs like oregano
and crushed red pepper flakes in the sauce and some chopped fresh parsley as a garnish, but this nutritious and economical dinner is pretty good just as it is,too.

  • 12 ounces pasta, such as spinach penne
  • 1 medium red onion, diced
  • 1 (14-ounce) can diced tomatoes with garlic and basil
  • 2 (14-ounce) cans white beans, rinsed and drained
  • 1/4 cup freshly grated Parmesan
  • cheese

Preparation

Step 1

Bring a large pot of salted water to boil. Add the pasta and cook al
dente, according to package directions. Drain. Meanwhile, coat the inside and the bottom of a saucepan with cooking
spray. Over medium heat, cook the red onion, stirring occasionally, for 5
minutes. Add the tomatoes and beans and simmer for 10 minutes. In a serving bowl, toss the pasta with the sauce and cheese.
