Ingredients

  • 1/2 cup butter
  • 1/2 cup flour
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped celery
  • 1-1/2 tsp creole seasoning
  • 2 tsp minced garlic
  • 42 oz chicken broth
  • 4 cups cooked chicken
  • 1/2 lb andouille sausage
  • 1/2 lb smoked sausage
  • 1 cup sliced okra

Preparation

Step 1

In Dutch oven place butter and flour on medium high heat.
Heat and stir constantly until it turns a medium chocolate color, do not burn
Turn to medium heat and add onion, pepper , celery, creole seasoning, minced garlic and heat for 3-5 minutes
Gradually stir in chicken broth
Add sautéed chicken, andouille and smoked sausages.
Simmer for a while
Add shrimp in last 10-15 minutes ( if desired)
Serve over rice
