Ingredients

  • 1

    cup sushi rice

  • 1

    yellow bell pepper, diced

  • 1

    red bell pepper, diced

  • 1

    orange bell pepper, diced

  • 1

    cucumber, unpeeled, cut into thin slices and then cut slices into quarters

  • 1

    avocado, diced

  • 1

    package imitation crab

  • 1/2

    cup low sodium soy sauce

  • 1-2

    tsp wasabi (or more to taste)

  • Seaweed wraps

Directions

Cook rice according to package. It will be sticky. Let cool. Dice peppers and cucumber and mix into rice. Dice avocado and mix into rice. Combine soy sauce and wasabi in a closed container. Shake until combined and pour over rice/vegetable mixture. Flake imitation crab and toss with rest of mixture (or serve on the side) Crumble seaweed on top and serve!
