Ingredients
- 1 Box Jiff Cornbread
- 1 can Cream Style Corn
- 2 Eggs
- 1/2 Cup Milk
- 1 tsp Chili Powder (maybe 1/2!!!)
- 1/2 tsp Cumin
- 3-4 C Shredded Cheese
- 1 Can Enchilada Sauce
- Rotisserie Chicken meat shredded
Preparation
Step 1
Preheat oven to 400 degrees. Spray a 9x13 dish and set aside.
Mix corn bread, corn, eggs, milk, chili, cumin and one cup of cheese. Bake for 20 minutes. Pole holes in the top after it has cooled slightly. Pour enchilada sauce over. Top with chicken and cheese (and paprika for color).
Bake 20 minutes, then cool for 10 minutes. Can serve with sour cream, tomatoes, lettuce...or plain.
