Roasted Squash with Sesame Seeds and Cumin

Ingredients
- 3 T sesame seeds
- 1 1/2 t cumin seeds
- 2 sm acorn squashes, about 1 lb each, cut into 1 in wedges
- 1 t coriander
- s&p
- 3 T olive oil

Step 1
Preheat oven to 400. Toast sesame seeds in sm skillet over med-high heat til golden brown, 1-2 min. Add cumin seeds and toast til fragrant, about 30 seconds. Transfer seeds to sm bowl.
Toss squashes with coriander, s&p and oil. Spread on baking sheet in single layer, toast 15 min. Add seed mix and toss to coat. Flip slices. Roast til tender and golden brown, about 15 min more.
