Tuna Souffle

Ingredients

  • Cheese Sauce:
  • 3 T. butter
  • 3 T. flour
  • 1 c. milk
  • 1 (7-oz.) can tuna, drained
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 2 T. chopped chives
  • 4 eggs, separated
  • 1 T. butter, melted
  • 1 T. flour
  • 1/4 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. dry mustard
  • 1 c. milk
  • 1/2 c. shredded Swiss cheese

Preparation

Step 1

Melt 3 T. butter, stir in 3 T. flour and cook until bubbly. Blend in 1 c. milk and cook until thick. Add tuna, 1/2 tsp. salt and chives. Remove from heat and beat in egg yolks. Whip whites until they form moist peaks. Fold gently into tuna mixture. Pour into sell buttered 1 1/2-quart souffle pan. Bake at 350 for 35 to 40 minutes or until center is firm. Melt 1 T. butter and stir in 1 T. flour, 1/4 tsp. salt, paprika and mustard. Cook until bubbly. Gradually blend in 1 c. milk and shredded cheese until melted. Serve cheese sauce with tuna.
