Ingredients

    lb. Bob Evans Original Roll Sausage

  • 1/2

    pkg. Bob Evans Diced Home Fries 20 oz

  • 3

    tablespoons bell pepper, chopped

  • 3

    tablespoons onion, chopped

  • 2

    tablespoons milk

  • 6

    large eggs

Directions

STEP 1 Crumble sausage into frying pan. Add potatoes, pepper and onion. Cook slowly until sausage is browned. STEP 2 Beat eggs and combine with milk. Add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened. STEP 3 Refrigerate leftovers. STEP 4 Optional Microwave Directions: In 2-quart glass casserole pan, crumbled sausage on high for two minutes. Stir to break-up sausage. Stir in potatoes, peppers and onions. Microwave two minutes on high. Beat eggs and combine with milk. Add to sausage mixture.
