Weight Watchers Scalloped Vegetables

Ingredients

  • 3 c. fresh or frozen broccoli, cauliflower and carrots
  • 1 c. skimmed milk
  • 1 T. cornstarch
  • 4 oz. Velveeta cheese
  • 1 tsp. beef bouillon

Preparation

Step 1

Preheat oven to 350. In pan, add cornstarch to small amount of milk. Stir, then add rest of milk. Add bouillon and heat on stove. When it starts to thicken, add cheese. When thickened pour over vegetables. Bake for 30 mins.

Cook vegetables in microwave until pretty well cooked. It helps baking time.
