Mashed Potato Salad

Ingredients

  • 5 lbs. potatoes
  • 1 1/2 c. onions, chopped fairly fine
  • 3/4 c. celery, chopped fine
  • 3/4 c. sweet pickles, chopped fine (or less?)
  • 4 heaping T. prepared mustard (or less)
  • 2 c. Miracle Whip salad dressing
  • 4 to 5 hard-boiled eggs

Preparation

Step 1

Peel potatoes and cook, then mash as usual with milk, salt, pepper and butter. Cool. Add onions, celery and pickles; mix well. Gradually mix in mustard and salad dressing until desired taste consistency and color is reached. Slice some center slices of boiled eggs and reserve for garnish. Chop the rest of the boiled eggs and add to the salad. Refrigerate for several hours or overnight.
