Hot Potato Salad

Ingredients

  • 3 lbs. potatoes
  • 8 slices bacon
  • 1/2 c. cider vinegar
  • 1/2 c. water
  • 1 T. brown sugar
  • 2 tsp. salt
  • 1 T. flour
  • 1 tsp. celery seed
  • 2 c. celery, diced
  • 1 lg onion, finely chopped

Preparation

Step 1

Cook potatoes in jackets. Peel and dice. Fry bacon. Drain off fat. Return 1/4 c. to pan and mix in flour, vinegar, brown sugar, salt and celery seed. Stir in celery and onion; heat. Pour over hot potatoes. Mix lightly. Serve hot.
