Ingredients
- 1 (46-oz) can chilled tomato juice
- 1 cucumber, peeled and chopped
- 1 mild red or white onion, chopped
- 1 avocado, peeled and chopped
- 3 T. olive oil
- 2 T. vine vinegar
- 1 lime, juiced
- 1 green pepper, chopped
- 1/2 tsp. oregano, crumbled
Preparation
Step 1
Combine all ingredients. Chill. Serve in soup bowls with a dab of sour cream.
