Gazpacho

Ingredients

  • 1 (46-oz) can chilled tomato juice
  • 1 cucumber, peeled and chopped
  • 1 mild red or white onion, chopped
  • 1 avocado, peeled and chopped
  • 3 T. olive oil
  • 2 T. vine vinegar
  • 1 lime, juiced
  • 1 green pepper, chopped
  • 1/2 tsp. oregano, crumbled

Preparation

Step 1

Combine all ingredients. Chill. Serve in soup bowls with a dab of sour cream.
