Fried Green Tomatoes

  • Flour (as needed)
  • Yellow cornmeal (as needed)
  • Oil (for frying)
  • Beaten egg (with a bit of milk stirred in)
  • Green tomatoes, sliced 1/4-inch thick
  • Salt to taste
  • Pepper to taste

Step 1

Any firm under-ripe tomatoes will do. The amounts of the ingredients don't really matter. It's the breading technique that is important for authentic fried tomatoes. Spread flour on a sheet of waxed paper. Put the egg/milk mixture into a shallow dish. Spread the cornmeal on a second sheet of waxed paper. Dredge the tomato slices in the flour, shake off any excess, then dip each into the egg, allowing any excess to drain off. Coat with cornmeal,lightly shaking off any excess. Heat oil in large heavy duty skillet over medium flame. When hot, add the tomato slices. Cook several minutes until golden brown. Turn to cook other side. Sprinkle with salt and pepper.
