Ingredients
- 1 lg. bag fresh spinach
- 1 (8-oz) pkg. fresh mushrooms
- 7 to 8 green onions
- 1 med. red onion
- 3 to 4 boiled eggs
- 6 slices bacon, fried crisp
- 1/3 c. sugar
- 1 tsp. salt
- 1/3 c. vinegar
- 1 c. water
- chopped green onions
Preparation
Step 1
Fry bacon until crisp, drain and crumble; set bacon aside. Add sugar, salt, vinegar, water and green onions to bacon grease. Add a little flour and cook until thickened. Pour over washed and cut spinach, sliced mushrooms, sliced red onion and sliced hard-boiled eggs. Add crumbled bacon and toss.
