Cheese & Vegetable Soup

Ingredients

  • 1 c. chopped onion
  • 2 c. diced carrots
  • 4 c. cubed potatoes
  • 5 chicken bouillon cubes
  • 1 bunch broccoli
  • 2 cans cream of chicken soup
  • 1 med. head cauliflower
  • 1 1/4 lbs. Velveeta cheese
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Add all vegetables, except cauliflower, to water and bouillon cubes. Bring to boil and simmer for 15 minutes. Add cauliflower, soup and 1 can of water. Cook until vegetables are tender. Cube cheese and add top soup. Heat until cheese is melted. Do not boil. Serve with bread or crackers.
