Beef****Beef and Cheddar Mason Jar Salad

04/04/16 - This is good, makes a nice change. I didn't make the Thousand Island dressing and used the variation described below, which was very good.

Ingredients
- 6 tablespoons Light Thousand Island Dressing (See Recipe) or 6 tablespoons homemade light Italian dressing mixed with 4 tablespoons 2% Greek yogurt
- 14 cherry tomatoes, halved
- 2 baby cucumbers, sliced and halved, or 1/2 to 2/3 cup small broccoli florets, raw
- 1/4 cup red onion, diced
- 60 grams Kraft Shredded Tex-Mex Light - the cheese is hard to pick up with a fork this way - use cubed cheddar instead next time
- 100 grams PC Fire-Roasted Sirloin Beef Strips
- 1/2 avocado, diced
- 4 cups spinach/arugula blend
- fresh cilantro, parsley or basil, if available
Preparation
Step 1
Divide and layer ingredients among the mason jars, starting with dressing then tomato, cucumbers, onion, cheese, roast beef, avocado and ending with spinach/arugula and optional herbs.
Place lid tightly on. When ready to eat give the jar a good shake and pour into a bowl.
