Ingredients

  • Pate Brisee- use springform pan or removable tart pan
  • See p. 67 of Provincial cookbook.
  • 1 tsp.butter
  • 6 slices bacon cut lardons style -- cooked to crisp
  • 2eggs plus 2 yolks
  • 1 1/2 c. heavy cream
  • 1/2 tsp. salt
  • pinch white pepper
  • 3/4 c. shredded Swiss cheese
  • 2 tab. butter in bits

Preparation

Step 1

Preheat oven to 375.
Whisk together eggs, yolks, cream, and seasonings.
Stir in cheese.
Place cooled pastry on baking sheet. Sprinkle bacon on bottom. Gently ladle egg mixture over.
Sprinkle butter bits over top/
Bake in upper third of oven for 25 minutes
