Mediterranean Catfish

Prepare rice pilaf to finish this flavor-packed dish off right.

Ingredients

  • 1 Tbsp. Greek seasoning
  • 4 4-6 ounce catfish fillets (any mild-flavored fish will work well)
  • 1 10-ounce bag pre-washed baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/2 cup julienned oil-packed sun-dried tomatoes with herbs

Preparation

Step 1

Sprinkle Greek seasoning on one side of fillets. In a large, lightly oiled skillet over medium-high heat, place fish, seasoned side down. Cook for 3 minutes. Sprinkle tops of catfish with Greek seasoning and turn. Place spinach on top of catfish and sprinkle with 1 Tbsp. water. Cover and cook for 3 minutes. Remove lid and mound wilted spinach on top of each catfish fillet. Spoon the feta cheese and sun-dried tomatoes evenly on each fillet. Cover and cook for 2-5 minutes, or until cheese is softened and fish is cooked through.
