Chicken with Caramelized Onions and Garlic

Ingredients
- 4 4-6 ounce boneless, skinless chicken breasts, pounded to a uniform thickness
- 2 large sweet onions, sliced lengthwise
- 20 garlic cloves, peeled and slightly smashed to flatten
- 1 cup dry white wine or reduced sodium chicken broth
- 1/2 cup nicoise or other small olives
Preparation
Step 1
In a large, well-oiled skillet over high heat, cook chicken for 2 minutes per side, or until browned. Transfer chicken to a plate. In the same skillet, add onions and garlic and stir constantly for 3-5 minutes, or until lightly browned. Add wine and bring to a boil, stirring frequently and scraping up any browned bits clinging to the pan. Reduce heat to medium, cover and cook, stirring frequently to prevent burning. Cook for 15 minutes, or until softened and browned. Return chicken and its juices to the pan, add olives, and stir to combine. Cover and cook for 3-5 minutes, or until chicken is cooked through.
