Corn Chip-Crusted Tilapia

A delicious and quick fish dish. Finish this meal with steamed veggies and yellow rice.

Ingredients

  • 2 eggs
  • 4 cups (about 4 ounces) corn chips
  • 4 4-6 ounce tilapia fillets
  • 1/4 cup (1/2 stick) butter
  • 1/2 cup refrigerated home-style salsa

Preparation

Step 1

In a bowl, beat eggs. Place corn chips in a zip-top bag and crush with a rolling pin until they resemble fine breadcrumbs. Dip the tilapia fillets, one at a time, in the eggs to coat. Place each fillet in the bag of crushed chips and coat with crumbs. In a large skillet over medium-high heat, melt 2 Tbsp. of the butter. Place 2 fillets in the hot butter, cover, and cook for 5 minutes. Turn the fillets and cook uncovered for 3 minutes, or until golden brown and crisp. Wipe the pan clean with a paper towel and add the remaining 2 Tbsp. of butter. Repeat with the remaining 2 fillets. Serve with salsa.
