Raisin Bread Pudding

“Bread pudding is a delicious and economical way to salvage most stale bread. If you do not want to buy raisin bread, use whatever bread you have on hand and add 1/2 cup of raisins in step 2.”

Ingredients

  • 5 slices raisin bread, cubed
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon or ground nutmeg

Preparation

Step 1

Grease a small casserole or baking dish. Cover bottom of dish with bread cubes.


Combine eggs, milk, vanilla, sugar and cinnamon in a medium bowl; mix with a fork until frothy. Pour over bread. Let stand for 10 minutes.


Preheat oven to 350°F. Place dish in a large baking pan. Add enough water to reach 1 inch up sides of dish.


Bake until pudding is set in center and lightly browned, about 35 minutes.

NOTE:

Save time and cook the pudding in the microwave. Cover with plastic wrap and microwave on HIGH for about 7 minutes. Rotate casserole; microwave for about 7 minutes longer or until set in the center.
