- 1/2 to 1 lb fresh mushrooms, quartered
- 1 1/2 to 2 pounds ground turkey
- 1-2 cloves garlic minced
- 1 - 10 ounce package chopped frozen spinach, thawed, well-drained.
- 6 eggs, beaten
- 1/4 to 1/2 cup grated parmesan cheese (from can is fine)
- 2 Tablespoons water

In large frying pan saute mushrooms lightly. Don't cook them down. Remove to another plate.
In the large frying pan, saute turkey or beef onion add spinach and cook through. Stir in the mushrooms. Combine eggs with parmesan and water; add to meat mixture. Cook stirring, until eggs set.
Serve with sourdough bread and catsup. Goes great with green salad.
