Perfect Fruit Compote

This recipe was sent to me from Bed and Breakfast Inns Online. It is from the Federal Crest Bed and Breakfast Inn.

This looks like a great compote to serve for breakfast or brunch.

Ingredients

  • Sauce:
  • 1/2 cup Sugar
  • 2 tbsp Cornstarch
  • 3/4 cup Pineapple Juice
  • 1/2 cup Orange Juice
  • 2 tbsp Lemon Juice
  • Fruit Mixture:
  • 20 oz can Pineapple Chunks
  • 11 oz can Mandarin Oranges
  • 3-4 Apples, diced
  • 2-3 Bananas
  • 1/2 cup Cherries or Grapes, for color

Preparation

Step 1

Sauce:
Add all ingredients together and cook until thickened, stirring constantly.

Set aside to cool.

Fruit Mixture:
Optional other seasonal fruits may be added. When sauce is cool, stir in fruit and refrigerate until needed.

Note: Bananas and apples will not turn brown in this sauce.
