Garlicky Shrimp and Green Beans

Ingredients

  • 1 pound angel hair pasta
  • 12 ounces fresh green beans, sliced on the bias into 1-inch pieces
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup sliced shallots
  • 4 cloves garlic, sliced
  • 1/4 teaspoon red pepper flakes
  • 1 1/4 pounds peeled and deveined small shrimp
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt

Preparation

Step 1

Bring a pot of salted water to a boil. Add pasta, return to a boil and cook 6 minutes. During last 3 minutes, add green beans. Drain, reserving 1/2 cup of the pasta water.

Meanwhile, heat oil in large skillet over medium-high heat. Add shallots, garlic and red pepper flakes; cook 1 minute. Add shrimp. Cook 1 minute, flip and cook 1 minute more. Stir in parsley.

Transfer to a large bowl. Toss with pasta, reserved pasta water and salt.
