Ham Fettucine

Ingredients

  • Demi-Glaze:
  • 1/2 C butter
  • 1 lb chopped ham
  • 1 C small peas
  • 1/2 - 3/4 C whipping cream
  • 5 T Parmesan cheese
  • demi-glaze
  • 12 oz. pasta - medium egg noodles or fettucine
  • 2 T butter
  • 2 T flour
  • 1 C beef bouillon or consomme
  • 2 T sherry

Preparation

Step 1

Melt butter, saute ham for several minutes. Add peas, cream, cheese and demi-glaze. Heat until peas are cooked. Mix with cooked pasta.

Demi- Glaze:
Brown butter. Add flour and cook until smooth and brown, stirring constantly. Slowly add bouillon. Cook and stir until thickened and mixture boils. Add sherry, stir and remove from heat.
