Toffee Peanuts

  • 1 1/2 cups unsalted peanuts
  • 1/2 cup brown sugar
  • 1/6 cup water
  • 1/4 tsp. Kosher salt
  • 1/2 tsp. Vanilla/butter extract, optional

Preparation

Step 1

Combine brown sugar and water in pan over medium heat. Add peanuts and stir. Continue stirring constantly until moisture has evaporated and peanuts are coated in sandy sugar. Monitor heat carefully and continue stirring until sandy sugar melts and coats peanuts. Add extract of using. Pour peanuts onto parchment lined sheet, break apart large clumps & cool completely.
