Crackling- chicken skin

  • Chicken skins

Preparation

Step 1

Bring small pot of water to boil
Place only 2 pieces of skin in water at a time for a minute
Remove, trim off excess fat.
Dry then leave them to air dry for 1 hour
Place in microwave 2 skins at a time
Wait until you stop hearing cracking noise, about 90 seconds- 2 minutes
Lightly sprinkle salt and pepper while still hot
