Ingredients

  • Non stick baking spray
  • Parchment paper
  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 tsps. Baking powder
  • 1/2 tsp. Salt
  • 2 tsps. Lemon zest
  • 2 eggs lightly beaten
  • 1/2 cup milk/1/2 cup butter melted (1 stick)
  • 3/4 cup fresh blueberries

Step 1

1. Preheat oven to 350. Spray pan with baking spray then line bottom with parchment. (9x5” or 8x4” loaf pan). In a large bowl stir in dry ingredients, then lemon zest. Make a well in center of dry ingredients.

2. Combine beaten eggs, milk, and melted butter in small bowl. Add to well in dry ingredients. Stir until combined. Mixture should be lumpy. Fold in blueberries. Spoon into prepared pan spread evenly.

3. Bake 60-70 minutes or until 4toothpick inserted near center comes out clean. If necessary, to prevent over browning, cover loosely with foil for the last 15 minutes.

4. Cool in pan on a wire rack for 10 -15 minutes. Remove from pan, then cool completely on wire rack.
