Ingredients
- 3 cups diced seeded Roma tomatoes
- 1 can black beans - (15 oz) drained, rinsed
- 1 can black-eyed peas - (15 oz) drained, rinsed
- 1 can red beans - (15 oz) drained, rinsed
- 1 can navy beans - (15 oz) drained, rinsed
- 1 cup finely-diced celery
- 2/3 cupp finely-diced red onion
- 2/3 cup sliced green onion
- 2/3 cup freshly-chopped parsley
- 1/4 cup cider vinegar
- 2 tablespoons cumin
- 1 tablespoon chili powder
- 2 teaspoons salt
- 1/2 teaspoon freshly-ground black pepper

Step 1
In a large bowl, combine all of the ingredients and toss well to combine. Cover and set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.
