Seared Chicken with Mexican Mole Sauce

Ingredients

  • Mole sauce:
  • 2 dried ancho chilies
  • 3 tbsp. slivered almonds
  • 1 med tomato cored and chopped
  • 1 tbsp. oil
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1/2 tsp cumin and oregano
  • 1 cup chicken stock
  • 2 tbsp. raisins
  • 1/2 tsp finely grated orange zest
  • 1/4 cup finely chopped good quality 90% dark chocolate
  • kosher salt and pepper
  • Chicken:
  • 2 chicken breasts cubes
  • 2 tsp oil
  • 1/2 tsp dried oregano
  • 1/4 tsp chili pwd , Kosher salt and pepper
  • Fresh cilantro sprigs for garnish..

Preparation

Step 1

1. in a skillet of med heat.add chilies and cook for 5 minutes. pressing them against the skillet
