Ingredients
- Mole sauce:
- 2 dried ancho chilies
- 3 tbsp. slivered almonds
- 1 med tomato cored and chopped
- 1 tbsp. oil
- 1 small onion finely chopped
- 3 garlic cloves minced
- 1/2 tsp cumin and oregano
- 1 cup chicken stock
- 2 tbsp. raisins
- 1/2 tsp finely grated orange zest
- 1/4 cup finely chopped good quality 90% dark chocolate
- kosher salt and pepper
- Chicken:
- 2 chicken breasts cubes
- 2 tsp oil
- 1/2 tsp dried oregano
- 1/4 tsp chili pwd , Kosher salt and pepper
- Fresh cilantro sprigs for garnish..
