Ingredients
- 3 eggs
- 2/3 cup pumpkin (not pumpkin mix)
- 1 c sugar
- 1 tsp lemon juice
- Beat with mixer
- ( in separate bowl)
- 3/4 c flour
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp ginger
- 1 tsp salt
- 1 tsp baking powder

Step 1
Fold dry ingredients in above mixture. Spread into well greased and floured 15x10x1 inch pan. (Cookie sheet). Bake 375 for 15 minutes.
Turn cake out on towel sprinkled w/ powdered sugar. Start at one end, roll cake and towel together, refrigerate. After cake is cool, unroll for filling.
Filling 1 c powdered sugar
4 tbsp margarine
1 (8oz) cream cheese
1/2 tsp vanilla
Beat w/mixer, spread over cake, roll cake and chill
1 large can pumpkin (29oz) makes 5 rolls
