COCONUT CHICKEN

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup almond flour
  • 1/4 cup unsweetened shredded coconut
  • 1/8 tsp sea salt
  • 1 egg
  • 2 Tbs coconut oil

Preparation

Step 1

Mix almond flour, shredded coconut and sea salt together in a bowl.
Beat egg in separate bowl.
Pound chicken breasts to a thin and even size, dip chicken breast in egg and roll in dry mixture.
Place on baking sheet lined with parchment paper, spray each side with olive oil spray.
Bake at 400F for 25 minutes, broil a minute or 2 if not crisp enough.
Serve with pineapple salad or apricot dipping sauce
