Dark Chocolate Tofu Pudding

This easy make-ahead dessert is so creamy, chocolaty, and tempting you may want to make a double batch!

Ingredients
- HEAT:
- 3 oz. extra-bittersweet bar chocolate (70%), chopped
- 1/2 cup sugar
- 4 Tbsp. unsalted butter, cubed
- 3 Tbsp. heavy cream
- Pinch of salt
- PURÉE:
- 1 pkg. lite firm, silken tofu (12.3 oz.)
- GARNISH:
- 4 tsp. slivered almonds, toasted
Preparation
Step 1
Heat chocolate, sugar, butter, cream, and salt in the microwave, 60–90 seconds; let stand 1 minute. Whisk chocolate mixture until combined.
Purée tofu in a food processor; transfer to a bowl. Whisk in chocolate mixture until smooth. Pour pudding into serving cups, cover, and chill at least 1 hour or up to overnight. Garnish servings with almonds.
