    cups flour

  • 1

    lb cold Lard ( Tenderflake ) (cubed)

  • 1

    tsp baking powder

  • 1

    tsp salt

  • 2

    tbsp brown sugar

  • 1

    egg

  • 2

    tbsp vinegar

  • 3/4

    cup cold water ( approx.)

Directions

Everything MUST be chilled ! That's the secret to flakey pastry ! Place dry ingredients in a large bowl. Add cold cubed lard. Cut cold lard into pea sized pieces with a pastry blender or 2 forks. Place in fridge till you are ready for the wet ingredients. Into a 1 cup measure add: 1 egg ( slightly stirred ) 2 tbsp vinegar very cold water till it makes 1 cup of liquid Stir together.. then add to cold flour mixture. Blend together .. then use your hands to form 3 balls of dough. Flatten then store in plastic bag. Refrigerate 30 minutes.... then pull out 1 ball of dough at a time. Roll out dough on lightly floured surface. Use for pie crusts or tart shells. The rest of the dough can be refrigerated or frozen. It's handy to have on hand in the freezer.
