Ingredients
- FOR THE RELISH, HEAT:
- 2 Tbsp. olive oil
- 3/4 cup diced red onion
- 1 Tbsp. minced fresh garlic
- 1 1/2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1 1/2 cups chopped jarred roasted red peppers
- 3 Tbsp. cider vinegar
- 1 Tbsp. sugar
- Salt to taste
- FOR THE BURGERS, MIX:
- 1 lb. ground turkey
- 2 Tbsp. chopped fresh parsley
- 2 tsp. minced fresh garlic
- 1 tsp. each kosher salt and black pepper
- MASH:
- 2 avocados
- 1 Tbsp. canola oil mayonnaise
- 1 Tbsp. fresh lemon juice
- ASSEMBLE:
- 4 hamburger buns, toasted
- Green leaf lettuce

For the relish, heat oil in a large skillet over medium. Add onion and cook until soft, about 4 minutes. Add 1 Tbsp. garlic, cumin, and cayenne; cook 1 minute. Add roasted peppers, vinegar, and sugar. Simmer relish 4–5 minutes; season with salt.
For the burgers, mix turkey, parsley, 2 tsp. garlic, 1 tsp. salt, and 1 tsp. black pepper just until combined. Form mixture into four 1-inch-thick patties. Spray both sides of each patty with nonstick spray.
Cook burgers on a griddle over medium-high heat until an instant-read thermometer inserted into the centers registers 165°, 6–7 minutes per side.
Mash together avocados, mayonnaise, and lemon juice; season with salt and black pepper. Assemble burgers on buns with avocado mixture, lettuce, and relish.
