Apple-Cinnamon Protein muffins

My low crab, gluten free, egg free muffins are a great way to get in some protein after a good workout.

Ingredients

  • 1/2 c Soy Flour
  • 2 scoops low-fat, low-carb protein (vanilla)
  • 1/2 cup Splenda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 c applesauce
  • 3/4 c water
  • 1 apple
  • 1/4 c almonds

Preparation

Step 1

Preheat oven to 375

Put all dry ingredients in processor and pulse to mix. Add in applesauce and water slowly while processing to mix. Pour into greased muffin pan.
On stove soften 1 apple that has been peeled and cut into small pieces. Place apple chunks on top of muffins.
Crush almonds in processor and place on top of muffins.

Bake for 10 min at 375, then reduce temp to 350 and bake 8 more minutes. Let cool in pan and serve.
