Balsamic Glazed Pork Chops

Ingredients
- 1 lb. Yukon Gold potatoes, scrubbed and chopped
- 1 tbsp. salt, plus 1/2 tsp.
- 1 5 oz. box baby spinach
- 1/4 c. melted butter
- 2 tbsp. brown sugar
- 1 tbsp. balsamic vinegar
- 1/2 tsp. black pepper
- 4 bone-in pork chops (about 1" thick)
- Snipped chives, for garnish

Preparation
Step 1
1. In large pot, cover potatoes with water. Add 1 tablespoon salt and cover; heat to boiling on high. Boil 15 minutes or until very tender, then stir in baby spinach. Drain then mash with melted butter.
2. Combine brown sugar, balsamic vinegar, remaining salt and black pepper; brush all over pork chops. Broil 4 minutes per side or until cooked (145 degrees F).
3. Serve with spinach mash. Garnish with snipped chives.
