Ingredients
- For the Sauce:
- 1/2 cup peeled, diced granny smith apple
- 1/2 cup golden raisins
- 1/2 cup fresh orange juice
- 1/4 cup low sodium chicken broth
- 2 tbsp minced red onion
- 2 tsp minced orange zest
- 1 tsp honey
- 1/4 tsp red pepper flakes
- 2 tbsp chopped fresh cilantro
- salt and pepper to taste
- For the scallops:
- Heat 1 tbsp olive oil
- 12 large sea scallops
- chopped fresh cilantro

Step 1
Sauce:
combine apple, raisins, orange juice, broth, onion, zest, honey, and pepper flakes in a small saucepan over medium high heat. Bring mixture to a boil, reduce heat, and simmer until apples are tender, about 5 minutes.
Off heat, stir in 2 tbsp. cilantro, season with salt and pepper.
For the scallops:
heat oil in a large skillet. Pat scallops dry with paper towel; season with salt and black pepper. Sear scallops until golden, 2/3 minutes per side. Serve scallops with apple raisin sauce and garnish with cilantro.
