Ingredients

  • 15-oz. can chickpeas or garbanzo beans, undrained
  • 15-oz. can small Northern beans, undrained
  • 15-oz. can pinto beans, undrained
  • 2 1-lb. bags frozen corn
  • 1-1/2 c shredded cooked chicken
  • 2 Tbsp minced onion
  • 1 red bell pepper, diced
  • 3 tsp minced garlic
  • 3 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 2 15-oz. cans chicken broth

Preparation

Step 1

1. Combine all ingredients in slow cooker.

2. Cover. Cook on low 8-10 hours or on high 4-5 hours.

3. Serve with warmed tortilla chips topped with melted cheddar cheese.
