Tuna Burgers

Ingredients
- 1 1/2 lbs fresh tuna diced
- 2 scallions thinly sliced
- 12 pitted kalamata olives, chopped
- 1 tbspn salted capers rinsed and minced
- salt & fresh ground peppers
- EVOO
- 1/4 cu mayo
- 1 1/2 teaspoons anchovy paste
- sliced tomatoes
- 4 buns split and toasted

Preparation
Step 1
1. Spread tuna, scallions, olives, capers on a plate and freeze for 5 min. Transfer to food processor and pulse until tuna is finely chopped. Transfer the mixture to a bowl, season with salt & pepper. Form 4 patties.
2. Light a grill, brush burgers with EVOO, grill over moderate heat, turning once until golden brown and crusty (appx 6 min)
3. In a bowl, mix mayo & anchovy paste, spread on the buns. Top with tomato and arugula and serve.
