Ingredients

    large russet potatoes, cut into 1" cubes

  • 14

    oz. smoked sausage, thinly sliced

  • 1

    small onion, chopped

  • ½

    cup chopped bell pepper

  • 1

    clove garlic, minced

  • ¼

    cup chicken stock

  • tsp. paprika

  • ¼

    tsp. each salt and pepper

  • ¼

    tsp. dried parsley

  • 2

    Tbsp. olive oil

Directions

In a large skillet heat oil and add sausage Cook until edges are browned. Remove the sausage from the skillet and add the potatoes. Cook over medium high heat until the potatoes are browned and tender. Add the onions, pepper, and garlic and cook 5 minutes. Add the chicken broth, cover. Cook 5-6 minutes, stirring occasionally. Remove cover - add spices and sausage and stir well. Cook on low 5 minutes longer.
