Slow Cooker Mediterranean Chicken

Makes 4-6 servings

Ingredients

  • 2 1/2 to 3-lb chicken
  • small onion, thinly sliced
  • 16-oz can tomato paste
  • 1/4 cup white wine (may use red wine)
  • 8 oz sliced fresh mushrooms (can use canned)
  • salt and pepper to taste
  • 1/2 tsp Italian seasoning

Preparation

Step 1

1. Layer the onion on the bottom. Mix the remaining ingredients, less chicken, together; if it is a little thick, add a little more wine. Put chicken on top of the onions and cover with tomato mix.

2. Cook in slow cooker on low 6-8 hours or on high 3-4 hours. Serve over spaghetti.
